Elk jalapeño and cheese SS.

Going with 3lbs of Elk and 2lbs of ground poke. AC LEGG #114, cure #1, 1/4 cup of filtered water, smoked extra sharp cheddar and some jalapeño powder.
Stuffed into casings given to me by my good buddy Nepas. 
These are going to sit overnight, smoke in the AM when the winds die down.

You have my attention!!  I have some elk meat from my December hunting trip with Mr. "T" that is destined for some elk SS.  I like the idea of the jalapeño with it, too.  I may have to make several batches, with and without.  I also have some Russian boar left that I want to use in my SS.  In addition to that, I have about 5 pounds of oryx meat that I plan to make some SS with.  The next week or so will be busy.

I "blame" Rick (Nepas) for getting me started with sausage making.  I have been his source for elk meat since he got me hooked.  I have learned so much from him.  Although he is younger than me, he has been doing sausage forever!!

I used extra sharp that I smoked a few months ago. I don't buy the High Temp stuff anymore either.
