BINGO  Chris is right. Sometime today it will go into the smoker. Wanted belly bacon but that is just to crazy priced for me. 3.95 a pound so its Canadian bacon for me.

So they spent the night in a cold water bath to help remove the salt. Gave them a good rub down with more maple syrup and crack black pepper & garlic rub. Now they are sitting in the smoker. Smoker set to 200 F and I will take the IT to 152 F.
I use to try and make them as round as I could but heck it don't make them taste any better so I said the heck with it this time.
Will up date later.
